Ingredients
  • 1 lb fingerling potatoes, peeled
  • 2 lbs celery, peeled and diced
  • 4 cups milk
  • 2 cups heavy whipping cream
  • Salt and white peppercorn to taste
Directions
  1. In a large pot cook potatoes, celery, milk and seasonings over medium heat for 15 to 20 minutes or until potatoes are fully cooked.
  2. Strain. Add 2 cups of heavy cream and whip with hand mixer until puréed.
