
Modeled after the great white Bordeaux wines of Graves, the Chalk Hill Sauvignon Blanc and its complementary components of Semillon and Sauvignon Gris, are gently harvested and whole-cluster pressed.

Grown on the cooler parcels of the estate, the Sauvignon Blanc plantings are of several clones, each providing a different facet to the wine's flavor profile. Some blocks provide aromatic perfume and tropical flavors while others deliver forward stone fruit and exotic minerality. Sauvignon Gris provides a lush texture and Semillon adds fullness and weight to the mouthfeel.
Each year, the wines are barrel fermented (predominately natural yeasts) in individual lots with biweekly batonage before being assembled into the final blend.
